Roasted Eggplant (beringela assada)

Roasted eggplant is a classic in my house 🙂 it’s a healthy dish that is very easy to prepare.

  • 1 eggplant
  • 2 Tbsp olive oil
  • 1 mashed garlic clove
  • 1 Tbsp soy sauce
  • 1 Tbsp curry
  • 1 Tbsp smoked paprika
  • Salt and pepper to taste

Preheat the oven to 200ºC. Slice the eggplant into 1/2cm thick circles. In a large bowl, mix all the ingredients and dunk both sides of each eggplant slice into this marinade. Arrange the sliced in a single layer baking sheet. Roast until lightly browned. Turning once (bake approx. 20 mins.)

  • 1 beringela
  • 2 c. sopa de azeite
  • 1 dente de alho amassado
  • 1 c. sopa de molho de soja
  • 1 c. sopa de caril
  • 1 c. sopa paprika fumada
  • Sal e pimenta a gosto

Pré-aqueçer o forno a 200ºC. Fatiar a beringela em círculos de 1/2cm de espessura. Numa uma tigela grande misturar todos os ingredientes e colocar as fatias de beringela neste molho. Organizar as fatias num único tabuleiro de ir ao forno.

Leve ao forno até que  fiquem douraras. Virar uma vez (assar aprox. 20 min)
