Cowpea stir fry (Salteado com feijão frade)

  • 2 cups of Cowpeas
  • 10x spring onions
  • 1 onion
  • 1 tomato
  • 10/15 Brussels sprouts
  • Olive oil, salt and spices

After soaking for at least 12 hours, bring the beans to a boil with salt, for 30 minutes or so. 5 minutes before its ready add the Brussels sprouts. Cut off the stem and remove any yellowing outer leaves. Cut each Brussels sprout in quarters from top to bottom. Place them with the beans  until tender.

In a wok, stir fry, the sliced spring onions, onion, and tomato with olive oil and salt, and add the spices you like ( last time I used pepper, curry, smoked paprika, and chinese five-spice). In the end mix everything together and serve.


  • 2 canecas de feijão frade demolhado
  •  10 x cebolinho
  • 1 cebola
  • 1 tomate
  • 10/15 couves de Bruxelas
  • azeite, sal, especiarias

Após demolhar o feijão durante pelo menos 12 horas, cozer com sal cerca de 30 minutos. 5 minutos antes de estar pronto adicionar as couves de Bruxelas. Cortar o caule e remover quaisquer folhas exteriores amareladas. Cortar em quartos de cima para baixo.

No wok, saltear o cebolinho cortado fininho, a cebola e o tomate em azeite e sal , e adicionar as especiarias que mais gostas ( da última vez que usei pimenta , caril, paprika fumada, e cinco-especiarias chinesas) . Quando estiver tudo pronto é só misturar e servir.
