Roasted butternut squash (Abóbora no Forno)

Extremely easy to prepare, but takes some time in the oven. It’s super healthy and you can use it as a side dish, chuck into a salad, pasta or soup!!

  • 2 medium butternut squash, halved lengthwise and seeded
  • Salt and freshly ground pepper (optional)
  • Olive oil for drizzling
  • few sprigs of fresh hers (thyme, sage, oreganos, rosemary, etc..) (optional)

Preheat oven to 200C, place the butternut squash halves on a large baking tray, drizzle over the olive oil, season to taste and cover with foil. It takes around 40-50 minutes, or until the squash is tender and has turned golden-brown in places.

PT – Muito fácil de preparar, mas leva algum tempo no forno. É muito saudável, pouco calórica, rica em fibras fonte de vitamina A, niacina e sais minerais.

  • 2 abóboras médias 
  • Sal, pimenta moída de fresco (opcional)
  • Mel e azeite a gosto
  • fio de azeite
  • ervas frescas a gosto (opcional)

Aquecer o forno a 200ºC, lavar, cortar as abóboras a meio e tirar as sementes. Colocar as metades num tabuleiro de ir ao forno, regar com um fio de azeite, por sal e pimenta a gosto e cobrir com folha de alumínio para não queimar. Demora cerce 40-50 minutos ou até estar tenro e a casca ficar dourada acastanhada em algumas zona.
